April is Filipino Food Month, and LTB Philippines marked the occasion in delicious fashion with the LTB Chefs Table Dinner on April 11, 2026, held at the elegant George and Onnie's Filipino Restaurant at The Shoppes at McKinley West, Taguig. Guests arrived to a warm and festive atmosphere, welcomed with pass-around bites of Tinapa Mousse and Kropek and glasses of wine courtesy of our generous sponsor Origine PH.
LTB Philippines Chef JA Ventura opened the evening with a welcome address before giving the floor to Sommelier Brian Devaux, who shared a few words with the gathered guests. The night's featured chefs, Executive Chef Mico Comendador and Chef Carlo Miguel, were then introduced to a round of applause, setting the stage for the culinary experience ahead.
While anticipation built before dinner service, guests were treated to a spirited round of the Pinoy Emoji Quiz Game. Teams huddled over their answer sheets, decoding Filipino phrases and titles with equal parts laughter and competitiveness, with Chef Fernando Aracama's team ultimately claiming victory just as the first courses arrived.
The menu, a contemporary take on Filipino classics, was a masterclass in elevated comfort food.
Guests began with Sinuglaw made with Snake River Farms Kurobuta Belly and Hamachi, a vibrant Okoy, and crispy Lumpiang Shanghai with nuoc cham. The mains showcased the breadth of Filipino culinary tradition — from the indulgent Wagyu Beef Cheek Kare-Kare featuring Snake River Farms Wagyu beef cheeks with tendon and tripe, to a delicate Seafood Sinigang with 45°C poached Tasmanian salmon and prawns, alongside Pancit Tapa, Crispy Lechon Belly Binagoongan, Gising-Gising, and Ensaladang Lato. The meal was rounded out with rice, and a dessert spread of Maja Blanca, Leche Flan, and Maruya A La Mode.
After dinner, the fun continued with a rousing game of Pinoy Pictionary that had tables on their feet. The competition was fierce, but when the dust settled, it was Chef OJ Gomez's team who took the win -- a fitting cap to a night full of good food, great company, and plenty of Filipino pride.
