The Philippine Young Chefs Club (PYCC) held their first Webinar last Saturday, September 6, 2025 via Zoom entitled “Future Ready Menus: Profitability Meets Culinary Progress” with guest speaker Chef Sonny Mariano, R&D Chef of SJM Consultancy Services, and was attended by over 30 PYCC members.
The Philippine Young Chefs Club is the youth arm of LTB Philippines Chefs Association. Recognized by the Worldchefs Young Chefs Club.
Chef Sonny Mariano is a Center of Culinary Arts Manila graduate and a former Philippine Young Chefs Club member. He is a gold medalist for the Pasta Category, and silver medalist for the Filipino Cuisine Category at the first-ever Philippine Culinary Cup. He is also a multi-awarded chef-innovator for Tasteless Food Group, Selecta PH consultant, an esteemed member of Culinary Team PH, and a beloved LTB Philippines member.
Chef Sonny presented a systematic menu development process covering market demographics, recipe testing, food tasting, production scaling, and pricing analysis. He emphasized understanding target customers, balancing profitability with innovation, and considering factors like age, location, culture, and lifestyle when developing menu items. He also stressed the importance of research in creating culturally appropriate menus that respect local cuisine and traditions.
