Last February 18, 2026, the LTB Philippines Chefs Association gathered at El Born in Mitsukoshi in North BGC for another edition of the LTB Chefs Table Series. It was a relaxed, enjoyable night: great food and wine, good company, and a few surprises along the way.
Executive Chef David Amoros put together a menu rooted in traditional Catalan cuisine, making good use of the restaurant's Josper charcoal grill. Starters included a Prawn Salad with Boletus, Iberian Ham and Chef's Mustard, Iberian Ham Croquettes with "Joselito" Pancetta and Escalivada Catalan roasted vegetables with toasted artisan bread, fresh tomatoes and Spanish olive oil.
For mains, the group was served a Josper Rubia Gallega Bone-In Ribeye sponsored by Hightower, Inc, Josper Grilled Octopus over Truffle-infused Potato Parmentier, and Josper Roasted Chicken with Vegetables. A rice dish with ceps mushrooms and Joselito "Secreto" rounded out the savory courses.
Dessert was Chef David's Limited Edition "Crema Catalana" Cheesecake made with Arla Cream Cheese — a blend of Basque, New York, and family recipes with local cheese from Negros. It was a delicious end to a well-crafted meal.
The evening also marked a special occasion: Chef Rolando Laudico's birthday! The members surprised him with a birthday cake and a round of Happy Birthday. It was a warm moment that reminded everyone why these gatherings matter beyond the food.
