Thank you to all those who attended our Annual General Meeting last July 15 2015 at the MilkyWay Cafe.
 
You will be happy to know that your 2014-2015 Board of Trustees accomplished 32 separate events and activities since June 2014. Please find full details in the LTB President’s Report 2015 attached.
 
As per our by-laws elections for the LTB Philippines Board of Trustees were held. The following were elected as members of the Board of Trustees 2015-2016:

(14) APRIL 7-22 2015 - LTB Culinary Scholarship Program 2015 (LTBCSP)

This year marked the 10th anniversary of the LTBCSP and the 150th teacher to complete the program. This year's batch hailed from Davao Lucena Bohol and Bacolod. While in Manila they received the best culinary training possible at the International School for Culinary Arts & Hotel Management (ISCAHM) through Chef Norbert Gandler. (15) LTB Chefs President Mentor Othmar Frei hosted welcome cocktails at Chesa Bianca for our scholars where they enjoyed classic Swiss specialties such as Raclette and a selection of fine charcuterie. (16) On the weekend they visited the Euro Swiss Sausage Factory to see how hams and sausages are made professionally and the Werdenberg International Corporation offices to see how imported food products are stored and distributed to hotels and restaurants. (17) They were hosted by chef Joanne Limoanco at the Unilever Test Kitchen and had a private demonstration by the Unilever Chefs. (18) The scholars had their graduation lunch at Aracama Filipino Cuisine with a specially prepared Boodle Fight featuring the best of Illongo cuisine by LTB Vice President Fernando Aracama. At the lunch the scholars received their diplomas from Chef Norbert Gandler and special knife kits courtesy of Gastrochef. (19) They also attended the LTB Philippines Chefs Association Paella Gigante Festival at the Greenbelt Mall and were LTB delegates to the Madrid Fusion Manila Gastronomic Conference at SMX Convention Center Mall of Asia. Ten international chefs together with ten local chefs presented their latest culinary discoveries and techniques in this 3-day conference. (www.madridfusionmanila.com)

(20) APRIL 18 2015 - Paella Gigante 2015 at Ayala Greenbelt 3 Park

LTB Philippines Chefs Association in cooperation with Sociedad Española de Beneficencia (SEB) prepared a 11 foot diameter Paella Mixta at the Greenbelt 3 Park for the benefit of the charity programs of SEB. LTB Chefs led by Mikel Arriet (Punta Fuego Beach Club) a native of San Sebastian Spain together with Filipino chefs Fernando Aracama (Aracama Filipino Cuisine) J. Gamboa (Cirkulo Restaurant) Carlo Miguel (Draft and 71 Gramercy) James Antolin (Pastry Alliance of the Philippines) Jerome Valencia (Tambai Yakitori Snack House) Sito Senn (The Country Club) and Gilbert Pangilinan (Cerveseria and Kai) used firewood and charcoal to cook the 100 kg of rice together with over 300 kg of chorizo sausages chicken prawns mussels and vegetables to make the delicious Paella Gigante for a crowd of over 700 people. The Philippine Young Chefs Club (PYCC) assisted the LTB chefs is serving the guests which included Ambassador to Spain Mr. Luis Calvo and various officials from the Department of Tourism and Madrid Fusion Manila. (21) April 24-26 2015 - Madrid Fusion Manila 2015

Last April 24-26 LTB Philippines Chefs Association supported the Madrid Fusion Manila Gastronomic Conference where top chefs from Spain Singapore Hong Kong and the Philippines including LTB Philippines Chefs Fernando Aracama and J. Gamboa presented their latest discoveries and techniques in the culinary field.

(22) April 22 - Welcome Dinner at Aracama Filipino Cuisine

Chef Fernando Aracama prepared a sumptuous Filipino dinner for the visiting chefs of MFM on April 23 at Aracama Filipino Cuisine. Present at the dinner were Spanish chefs: Elena Arzak Francisco Paniego and Mario Sandoval among others as well as officials of the Department of Tourism (DOT) and Madrid Fusion Manila (MFM).

April 23 – Malacanang Reception for MFM Chefs

(23) April 24 – MFM presentation by LTB Vice President Fernando Aracama

Chef Fernando Aracama presented his topic Base Ingredients: Sour Fruits at the Madrid Fusion Manila Gastronomic Conference to a crowd of over 1000 chefs restaurateurs food and beverage professionals from the region. Chef Fernando detailed the use of native tomatoes mangoes batuan sampaloc guava and other sour fruits in Negrese cuisine and demonstrated KBL Kadios Baboy at Langka and the making of Pickled Green Mangoes.

(24) April 25 - International Press Dinner at Cirkulo

Cirkulo Restaurant hosted over 40 members of the international press and officials of MFM and the DOT at Cirkulo for dinner. The guests were given a glimpse of Chef J. Gamboa's presentation the following day by way of the dishes served: Cabeza de Cerdo or Sisig made from suckling pigs and Cochinillo Asado or Spanish Style Roast Suckling Pig. The guests enjoyed the delicious wines hosted by Bodegas Ramon Bilbao from Rioja Alta Spain: Monte Blanco Verdejo Mar de Frades Albariño Ramon Bilbao Gran Reserva 2006 and Ramon Bilbao Mirto 2008 delighted the palette of the guests.

(25) April 26 – MFM presentation by LTB President J. Gamboa

Chef J. Gamboa closed MFM with his topic: Nose to Tail Cooking in the Filipino-Spanish Menu wherein Chef Gamboa examines the full use of the pig and cow in Filipino and Spanish cuisine and notes their similarities. He also presented a video detailing the journey of the suckling pig from the hills of Marinduque to the abattoir in Pasay then to the kitchen of Cirkulo where it is prepared for the Cochinillo Asado or Spanish Style Roast Suckling Pig.

(26) MAY 12 2015 - LTB Chefs Table at 71 Gramercy

The LTB Philippines Culinary Team chefs Mia Yan and Sonny Mariano who are competing in the APC Culinary Challenge in Singapore prepared their competition main course. The Chefs Table was hosted by LTB Director chef Carlo Miguel.

(27) JUNE 22 2015 - APC Culinary Challenge Singapore

Congratulations to Chefs Mia Yan and Sonny Mariano of the LTB Philippines Culinary Team for winning the WACS Asia Continental Director Medal at the APC Culinary Challenge in Singapore last June 22. Our chefs prepared a 2 course menu in 2 hours from a market basket of ingredients presented right before the competition. They prepared

First Course: Lobster Tortellini with Vanilla-Lime Hollandaise Roasted Asparagus and Oyster Foam

Main Course: Porcini crusted Beef Tenderloin with Butternut Squash and Gruyere Tart Braised Leeks Red Pepper Relish and Morel Jus

(28) JUNE 25-27 2015 – Mindanao Culinary Festival 2015 – Davao

LTB Phils. BOD PAP and WACS accredited Judges officiated the MCF 2015 at the SM Lanang Premier where over 120 chefs from Mindanao participated in the 3 day culinary event.

(29) Sally San Jose Anton Abad and others were inducted into the board of LTB Philippines Chefs Association Mindanao Chapter in ceremonies held at Chippen's Garden on June 24 2015. This is the first provincial chapter of LTB Philippines Chefs Association.
